salsa verde
I love to make tomatillo salsa I start with:
Preheating oven to 350 degrees.
12 medium to large tomatillos husks removed and wash the toms. cut in 1/2 if over 2.5" inches.
1 whole head of garlic.
6 or more serrano chilis, stems removed
1 med. white onion,peeled and quartered.
1/2 a bunch of cilantro
salt
Distribute the above evenly on a baking sheet pan. Drizzle with olive oil. salt lightly.
Bake 20 minutes, then turn tomatillos & onion with tongs-remove garlic to cool.
Bake another 10-15 mins.
Cut garlic in half and squeeze into a blender or food processor,discard hull.
Scrape everything off the pan including any juice in to the food processor.
Blend and pour in to a jar or bowl.
